Ingredients
Protein Bar Base
1cupoat flour (oats blended to a flour)
3/4cupalmond butter
1/2cupcoconut butter, softened, store bought or homemade recipe below in notes
1/3cupvanilla protein powder
1/4cupmaple syrup or honey
1teaspoonvanilla extract
2-3tablespoonsmilk of choice, if needed
Pinch of sea salt
Optional Chocolate Topping
1/2cupdark chocolate chips
2teaspoonscoconut oil
1tablespoonchopped toasted almonds
1tablespoontoasted coconut flakes
Instructions
Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.If your coconut butter is solid, soft by placing the jar in warm water for a few minutes or give it a burst or two in the microwave.In a medium bowl, combine the almond butter, softened coconut butter, maple syrup and vanilla extract. Stir until smooth and creamy.Add the oat flour, protein powder and sea salt. Mix until a thick dough forms.If the mixture feels too dry, add milk one tablespoon at a time until it comes together.Transfer the mixture into the prepared pan and press firmly into an even layer using the back of a spoon or spatula.Place in the refrigerator while preparing the topping.
Chocolate Topping (optional)
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.When the chocolate is melted, lift from the bars from the pan and slice into 8 bars or more smaller squares.Pour or drizzle over the bars and sprinkle with chopped almonds and toasted coconut before the chocolate sets.Refrigerate for1–2 hours until completely firm.Store in an airtight container in the refrigerator for up to one week or freeze for up to two months.Tips & VariationsUse cashew butter instead of almond butter for an even creamier texture.Add a tablespoon of chia seeds or hemp hearts for extra nutrition.Mix shredded coconut into the base for additional texture.Add a little lemon zest for a fresh coconut slice flavour.Swap the dark chocolate topping for white chocolate if you prefer a sweeter finish.
