Each sandwich has a soft, chocolatey brownie base on the top and bottom, with a smooth banana protein ice cream filling in the middle. The recipe makes four generous sandwiches, perfect for keeping in the freezer whenever a chocolate craving strikes.

Why You Will Love These Brownie Ice Cream Sandwiches

No baking needed. The brownie layers are made by blending ingredients into a fudgy dough, so you can skip the oven entirely.

A creamy, naturally sweet centre. Frozen bananas create a delicious soft-serve-style ice cream texture, while vanilla protein powder adds flavour and a protein boost.

Simple, nourishing ingredients. Almond flour gives the brownie layer a tender texture, dates add natural sweetness, and cocoa brings that deep chocolate flavour we all love.

A dessert that feels special. These sandwiches look impressive but are surprisingly easy to make. They are ideal for an afternoon treat, a summer dessert or a make-ahead sweet snack.

The Secret To The No-Bake Brownie Layers

Traditional brownies usually rely on baking to create their texture, but these no-bake brownie layers work differently. Almond flour, dates and cocoa come together to make a soft, dense mixture that resembles a rich chocolate brownie.

Almond flour gives the mixture body and a gentle nutty flavour. Dates provide sweetness and help bind everything together, while cocoa delivers that classic chocolate taste. When blended, the ingredients form a pliable dough that can be pressed into thin layers. If the mixture seems too dry, add a teaspoon of water at a time until it holds together. If it feels too sticky, add a little extra almond flour.

The result is a fudgy brownie layer that stays tender when chilled, making it perfect for sandwiching around the ice cream filling.

How To Make the Banana Protein Ice Cream

The middle layer is wonderfully simple. Frozen bananas become thick and creamy when blended, creating a texture similar to soft-serve ice cream. Their natural sweetness pairs beautifully with vanilla protein powder. For the smoothest result, slice your bananas before freezing them. A powerful blender or food processor will make the job easier.

You may need to pause and scrape down the sides, adding only a small splash of milk if necessary to help the mixture blend. The less liquid you use, the thicker your filling will be. This matters because you want a creamy layer that sits neatly between the brownie sheets rather than running out the sides.

Protein powder adds extra protein to the dessert, helping make it a more satisfying snack. Protein also supports muscle maintenance and repair as part of a balanced diet. Choose a vanilla protein powder you enjoy, as different brands vary in sweetness and texture.

A Little Blended Bites Addition Eating

At Blended Bites, we believe healthy eating can be about adding nourishing ingredients rather than constantly taking foods away. These brownie ice cream sandwiches are a lovely example.

Dates contribute sweetness, bananas provide fruit, almond flour adds richness, and protein powder helps boost the protein content. You still get the pleasure of a chocolate dessert, with ingredients you can choose and understand.

They are not meant to replace every dessert or be labelled as a miracle health food. They are simply a delicious homemade option when you want something chocolatey, creamy and a little more nourishing.

Tips For Perfect Sandwiches

Freeze the bananas ahead: Use ripe bananas for the sweetest flavour and creamiest texture.

Keep the brownie layers even: Press the dough between sheets of baking paper and aim for a similar thickness on both sides.

Chill before slicing: A short freeze helps the layers firm up and makes assembly easier.

Let them soften slightly: Leave the sandwiches at room temperature for a few minutes before eating for the best brownie texture and creamy centre.

Make them your own: Add a pinch of sea salt to the brownie dough, or sprinkle cacao nibs into the ice cream layer for a little crunch.

A Freezer-Friendly Chocolate Treat

Once assembled, these Brownie Ice Cream Sandwiches are ready to freeze until firm. Store them in an airtight container, with baking paper between the sandwiches to prevent sticking. They are ideal for preparing ahead, so a homemade chocolate treat is always within reach.

The best part? You get the combination of rich chocolate brownie and creamy vanilla ice cream in every bite, without turning on the oven.

If you love no-bake desserts that taste indulgent while using simple ingredients, these Brownie Ice Cream Protein Sandwiches deserve a place in your freezer. Make a batch, let them set, and enjoy a little chocolate-and-vanilla magic whenever you fancy it! 🤎

Ingredients

No-Bake Brownie Layers

  • 1 cup almond flour
  • 1 cup soft pitted dates
  • 3 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1-2 teaspoons water, only if needed

Banana Protein Ice Cream

  • 3 medium ripe bananas, sliced and frozen
  • 2-3 tablespoons vanilla protein powder
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons milk of choice, only if needed for blending

Instructions

  • Make the brownie mixture. Add the dates, almond flour, cocoa powder, vanilla and salt to a food processor. Blend until the mixture comes together into a soft, fudgy dough. If it is too crumbly, add water a teaspoon at a time.
Shape the brownie layers. Divide the dough into eight equal portions. Press each portion into a thin, roughly equal-sized rectangle between two sheets of baking paper. Pair the rectangles into four matching sets. Place them on a tray and chill while you prepare the filling.
Blend the ice cream. Add the frozen banana slices, vanilla protein powder and vanilla extract to a powerful blender or food processor. Blend, stopping to scrape down the sides as needed. Add a tiny splash of milk only if necessary. The mixture should be thick, creamy and scoopable.
Assemble the sandwiches. Spread an even layer of banana protein ice cream over four brownie rectangles, leaving a small border around the edges. Place the remaining four brownie rectangles on top and gently press to create sandwiches.
Freeze until firm. Arrange the sandwiches on a baking-paper-lined tray and freeze for 2–3 hours,or until firm enough to handle.
Serve and enjoy. Let each sandwich sit at room temperature for around 3–5 minutes before eating so the brownie softens slightly and the banana centre becomes creamy.
    Notes:
Use soft dates. If yours are dry, soak them in warm water for 10 minutes, then drain thoroughly before blending.
Protein powders vary in sweetness and absorbency. Start with 2 tablespoons and add more to taste.

For easierassembly, freeze the banana filling in a thin layer for 20–30 minutes beforespreading if it feels too soft.

Store in anairtight container in the freezer for up to 1 month for best texture.
