Mint Chocolate Protein Ice Cream Bars
Ingredients
- 1 1/2 cups thick Greek-style yogurt (or coconut yogurt for dairy-free)
- 1/2 cup milk of choice (almond, oat, or dairy)
- 1/3 cup vanilla or chocolate protein powder
- 2-3 tablespoons honey or maple syrup (to taste)
- 1/2-1 teaspoons peppermint extract (to taste)
- 2 tablespoons mini dark chocolate chips or cacao nibs
- 1-2 drops natural green food colouring (optional)
- 5 popsicle sticks
Chocolate Drizzle
- 1/2 cup dark chocolate chips
- 1 teaspoon coconut oil
Instructions
- Add yogurt, milk, protein powder, honey and peppermint extract to a blender. Blend until smooth and creamy. Taste and adjust sweetness or mint flavour if needed. Stir through the mini chocolate chips by hand.Pour the mixture into silicone ice cream bar moulds or popsicle moulds. Insert sticks and tap gently to remove air bubbles. Freeze for at least 4–6 hours, or until completely firm.
Chocolate Drizzle
- Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, let chocolate cool slightly so it doesn’t melt the bars on contact.Remove the frozen bars from the moulds. Using a spoon or a Ziplock bag with the corner cut off drizzle the melted chocolate over the bars. Place on a parchment lined tray.Return the bars to the freezer for 10–15 minutes until the chocolate drizzle is fully set. Store in an airtight container in the freezer for up to 2 weeks.Tips & VariationsFor a creamier texture, use full-fat Greek yogurt or add 1 tablespoon coconut creamPrefer a stronger mint flavour?
