Apricot Cream Protein Bark

Apricot Cream Protein Bark

Creamy, Fruity & Crunchy Summer Goodness

If you love desserts that combine creamy, fruity and nutty flavours, this Apricot Cream Protein Bark is one you are going to want to keep in your freezer. Sweet apricots, creamy Greek yogurt, silky nut butter and crunchy chopped nuts come together in layers to create a simple frozen treat that is refreshing, satisfying and packed with protein.

It is a little bit like frozen apricot cheesecake crossed with a nutty yogurt bark -and it takes only minutes to prepare.

That is exactly the kind of recipe we love at Blended Bites.

We believe healthy treats should be delicious first. There is no reason you need to give up desserts simply because you are trying to eat more nourishing foods. Instead, we focus on Addition Eating – adding protein, fruit, healthy fats and other wholesome ingredients to create food that tastes amazing and leaves you feeling satisfied.

This bark does exactly that.

The Star Ingredient: Apricots

Apricots bring beautiful natural sweetness and a lovely tangy flavour to this recipe. Fresh apricots are wonderful when they are ripe and in season, but canned apricots make this recipe incredibly convenient and allow you to enjoy it all year round. If using canned fruit, choose apricots packed in juice rather than heavy syrup where possible, and drain them thoroughly before using.

Don’t have apricots? Peaches make an excellent substitute. In fact, the peach version is every bit as delicious and gives the bark a slightly sweeter, juicier flavour.

Both fruits pair beautifully with creamy yogurt and nut butter.

A Creamy Protein-Rich Layer

The middle layer is where the magic happens. Thick Greek yogurt creates a smooth, creamy base with a slight tang that balances the sweetness of the fruit. It also provides plenty of protein and beneficial probiotics.

For an extra protein boost, we add vanilla protein powder to the yogurt. The protein powder helps make the bark more satisfying while adding a subtle vanilla sweetness that works beautifully with the apricots.

If you are using a particularly sweet protein powder, you may not need any additional sweetener at all.

For a dairy-free version, use a thick plant-based Greek-style yogurt and your favourite dairy-free protein powder.

Nut Butter Adds Richness

Once the creamy yogurt layer is spread over the apricots, we add a generous drizzle of nut butter. Peanut butter, almond butter and cashew butter all work beautifully.

Almond butter creates a classic apricot-and-almond combination, while cashew butter gives you a milder, creamier flavour. Peanut butter adds a stronger, slightly salty contrast that makes the fruit taste even sweeter. If your nut butter is thick, gently warm it for a few seconds so it is easier to drizzle.

Then comes the crunch.

A scattering of chopped nuts provides texture and turns this simple frozen dessert into something much more satisfying. Almonds, pistachios, walnuts, pecans or macadamias are all delicious choices.

Why We Love Protein-Rich Snacks

One of the biggest advantages of this bark is its protein content. Protein helps support muscle maintenance and recovery and can contribute to feelings of fullness. Combining protein with fruit and healthy fats creates a snack that’s much more satisfying than a conventional sugary frozen treat.

That is why this bark can work equally well as a dessert or an afternoon snack. Enjoy a piece after a workout, with your afternoon coffee, or as a refreshing treat after dinner.

Easy, No-Bake & Freezer Friendly

Another reason this recipe is a winner is its simplicity.

There is no oven required.
No complicated techniques.
No fancy equipment.
Just layer the ingredients, freeze, slice and enjoy.

It is also ideal for meal prep. Make a batch on the weekend and keep it in the freezer for those moments when you want something sweet.

Because it is stored frozen, it keeps for weeks and is ready whenever you need it. Just allow a piece to sit at room temperature for a few minutes before eating so the yogurt layer softens slightly.

Make It Your Own

There are plenty of ways to customise this bark.
Add cinnamon to the yogurt layer for a warm, spiced flavour.
Add lemon zest to make the apricot taste brighter.
Sprinkle shredded coconut over the top for a tropical twist.
Add cacao nibs for chocolatey crunch.
Drizzle with melted dark or white chocolate.
Or swap the apricots for peaches, nectarines, strawberries, blueberries or mixed berries.

You could even add a layer of granola between the fruit and yogurt for extra crunch.

The possibilities are endless.

This Apricot Cream Protein Bark is creamy, fruity, nutty and satisfying, with plenty of protein and wholesome ingredients packed into every delicious piece.

It’s proof that healthy treats don’t need to be complicated. Sometimes the best desserts are simply layered, frozen and enjoyed. ❄️

I love that dessert barks are so easy to make, require minimal cleanup, and swap out heavy refined sugars for nutrient-rich alternatives. Below are three variations: a protein-packed yogurt base, an antioxidant-rich dark chocolate base, and a viral fruit and nut base.🍓
