Ingredients

Fruit Layer

  • 2 cups fresh apricot or peach slices UR
  • 2 1/2 cups canned apricots or peaches, well drained
  • 1 teaspoon lemon juice, optional

Creamy Protein Layer

  • 2 cups thick Greek yogurt
  • 1 teaspoon vanilla protein powder
  • 1 teaspoon vanilla extract
  • 1-2 tablespoon maple syrup or honey,optional

Nut Butter Topping

  • 1/4 cup natural almond butter, cashew butter or peanut butter
  • 1-2 teaspoons coconut oil, optional, to make the nut butter easier to drizzle

Crunchy Topping

  • 1/3 cup chopped almonds, pistachios, walnuts, pecans or macadamias

Optional Extras

  • Lemon zest
  • Shredded coconut
  • Cacao nibs
  • Cinnamon
  • Freeze-dried berries
  • Melted dark or white chocolate

Instructions

  • Line a small baking tray or loaf pan with baking paper.
    Arrange the apricot or peach slices over the bottom of the pan in a single layer. Make sure they touch to form a strong base when frozen on which to add the upper layers.
    If using, lightly drizzle the fruit with lemon juice.
    In a bowl, mix the Greek yogurt, protein powder, vanilla and sweetener until smooth and creamy.
    Spread the yogurt mixture evenly over the fruit.
    Warm the nut butter gently if necessary until it becomes easy to drizzle.
    Drizzle the nut butter over the yogurt layer.
    Sprinkle the chopped nuts evenly over the top.
    Add any optional toppings.
    Freeze for 3–4 hours, or until firm.
    Remove from the freezer and allow to soften for 5 minutes.
    Slice or break into bark-style pieces and serve.
    Store in an airtight freezer-safe container for up to 1 month. Place baking paper between layers to prevent sticking.
