Double Chocolate Frozen Yogurt Protein Bark
Ingredients
- 2 cups thick Greek yogurt (or dairy-free Greek-style yogurt)
- 1/4 cup heavy cream or full-fat coconut cream
- 1 scoop chocolate protein powder
- 3 tablespoons cacao or cocoa powder
- 2 tablespoons maple syrup or honey (optional)
- 1 teaspoon vanilla extract
- Pinch of sea salt
Chocolate Topping
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
Optional Mix-Ins
- 1/4 cup dark chocolate chips
- 2 tablespoons cacao nibs
- 2 tablespoons chopped roasted hazelnuts
- 2 tablespoons chopped almonds
- 2 tablespoons chocolate protein crispies
Optional Toppings
- Shaved chocolate curls
- Toasted coconut
- Freeze-dried raspberries
- Flaky sea salt
- Hemp hearts
Instructions
- Line a loaf pan or small tray with baking paper.In a large bowl, whisk together the Greek yogurt, heavy cream (or coconut cream), chocolate protein powder, cacao powder, maple syrup, vanilla, and sea salt until completely smooth.Fold through any optional mix-ins.Spread the mixture evenly into the prepared pan.Freeze for 2 hours until firm.
Chocolate Topping
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Pour or drizzle the melted chocolate over the frozen yogurt layer.Immediately sprinkle over your chosen toppings.Return to the freezer for another 20–30 minutes until the chocolate has completely hardened.Slice or break into bark pieces and serve.Store in an airtight container in the freezer for up to 2 months. Let the bark soften for 2–3 minutes before serving for the creamiest texture.
