Caramel Slice

Chocolate and caramel lovers -this one is for you! Truly the best-ever, no bake, caramel slice recipe. After all, for the best dessert slices, you can't go wrong with power couple chocolate and caramel that includes a thick layer of delicious gooey caramel, sandwiched between a crunch coconut base and mouthwatering chocolate topping.
A decadent treat to share with friends on any occasion. Tried, tested and loved by all. Cut it into small squares as this is rich and delicious and you don’t need much to satisfy. Keeps well in the freezer for when you need a special treat.

Ingredients

Base

  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1/4 cup coconut oil, melted
  • 1/4 cup cocoa or cacao powder
  • 2 tablespoons honey or maple syrup

Caramel Filling

  • 3/4 cup peanut (or any nut or seed) butter
  • 1/4 cup coconut oil
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract

Chocolate Topping

  • 6 oz chocolate chips
  • 2 tablespoons coconut oil

Instructions

Base

  • Line a 4 x 6 inch container with baking paper or cling film.
    Process the base ingredients in a food processor until well combined.
    Press the mixture into the prepared container and set aside in the freezer or fridge.

Caramel Filling

  • In a small pot place peanut butter, coconut oil, honey and vanilla extract and gently heat until melted.  Stir until smooth.
    Pour over the base and return to the freezer.

Chocolate Topping

  • Melt the chocolate and coconut oil in a microwave in 30 second bursts stirring between each burst or melt using a double boiler. Stir until well combined then allow to cool slightly.
    Pour over the middle layer, then chill in the fridge for at least 1 hour to set.
    Once firm, cut into pieces with a sharp knife. You can turn the slice on its side to cut it if the middle layer is getting squashed down.
    Store the slice in an airtight container in the fridge. It also freezes well. You can eat it straight from the freezer or let soften for a few minutes at room temperature.
