Ingredients
Base
1cuprolled oats
1cupdesiccated coconut
1/4cupcoconut oil, melted
1/4cupcocoa or cacao powder
2tablespoonshoney or maple syrup
Caramel Filling
3/4cuppeanut (or any nut or seed) butter
1/4cupcoconut oil
2tablespoonshoney or maple syrup
1/2teaspoonvanilla extract
Chocolate Topping
6ozchocolate chips
2tablespoonscoconut oil

Base
Line a 4 x 6 inch container with baking paper or cling film.Process the base ingredients in a food processor until well combined. Press the mixture into the prepared container and set aside in the freezer or fridge.
Caramel Filling
In a small pot place peanut butter, coconut oil, honey and vanilla extract and gently heat until melted. Stir until smooth.Pour over the base and return to the freezer.
Chocolate Topping
Melt the chocolate and coconut oil in a microwave in 30 second bursts stirring between each burst or melt using a double boiler. Stir until well combined then allow to cool slightly. Pour over the middle layer, then chill in the fridge for at least 1 hour to set.Once firm, cut into pieces with a sharp knife. You can turn the slice on its side to cut it if the middle layer is getting squashed down.Store the slice in an airtight container in the fridge. It also freezes well. You can eat it straight from the freezer or let soften for a few minutes at room temperature.
