Frozen Snickers Protein Pops

Ingredients

  • 2 cups thick Greek yogurt (or dairy-free yogurt)
  • 1 scoop vanilla protein powder
  • 1/4 cup natural peanut butter
  • 4 soft Medjool dates, pitted (if your dates are dried and firm soak 10 minutes in warm water and drain)
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk of choice (if needed for blending)

Chocolate Coating

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Optional Toppings

  • Chopped roasted peanuts
  • Cacao nibs
  • Flaky sea salt
  • Dark chocolate drizzle

Instructions

  • Add the yogurt, protein powder, peanut butter, dates, vanilla, and milk (if needed) to a blender or food processor.
    Blend until completely smooth and creamy.
    Line a small baking dish with parchment paper and use a cookie scoop or spoon to drop 6-8 blobs onto the tray. Or pour the mixture evenly into popsicle moulds.
    Insert popsicle sticks and freeze for at least 5–6 hours or overnight. 

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Working quickly, holding the popsicle stick, dip one pop at a time into the bowl of melted chocolate until it is fully coated. Lift the pop from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining pops.
    Immediately sprinkle with chopped peanuts, cacao nibs or flaky sea salt before the chocolate sets.
    Place on a baking paper-lined tray and return to the freezer for 10 minutes until the chocolate hardens.
    Store in an airtight container or freezer-safe bag in the freezer for up to 2 months. Store between pieces of parchment so they don’t stick together.
