Ingredients
2cupsthick Greek yogurt (or dairy-free yogurt)
1scoopvanilla protein powder
1/4cupnatural peanut butter
4soft Medjool dates, pitted (if your dates are dried and firm soak 10 minutes in warm water and drain)
1teaspoonvanilla extract
2tablespoonsmilk of choice (if needed for blending)
Chocolate Coating
1cupdark chocolate chips
1tablespooncoconut oil
Optional Toppings
Chopped roasted peanuts
Cacao nibs
Flaky sea salt
Dark chocolate drizzle
Instructions
Add the yogurt, protein powder, peanut butter, dates, vanilla, and milk (if needed) to a blender or food processor.Blend until completely smooth and creamy.Line a small baking dish with parchment paper and use a cookie scoop or spoon to drop 6-8 blobs onto the tray. Or pour the mixture evenly into popsicle moulds.Insert popsicle sticks and freeze for at least 5–6 hours or overnight.
Chocolate Coating
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Working quickly, holding the popsicle stick, dip one pop at a time into the bowl of melted chocolate until it is fully coated. Lift the pop from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining pops.Immediately sprinkle with chopped peanuts, cacao nibs or flaky sea salt before the chocolate sets.Place on a baking paper-lined tray and return to the freezer for 10 minutes until the chocolate hardens.Store in an airtight container or freezer-safe bag in the freezer for up to 2 months. Store between pieces of parchment so they don’t stick together.
