Ingredients
Base Crust
- 1 cup Brazil nuts, almonds or walnuts or a mix
- 1/2 cup desiccated coconut
- 1/2 cup oats, instant or quick
- 1/2 cup dates, soaked 30 minutes and drained
- 1/4 cup cocoa or cacao powder
Jam Layer
- 2 cups frozen mixed berries
- 2 tablespoons honey or maple syrup
- 1 tablespoon chia seeds
- 1/2 cup desiccated coconut
White Chocolate Topping
- 1 1/2 cups white chocolate chips
- 3 tablespoons coconut oil
- 1 cup desiccated coconut
Instructions
Base Crust
- Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Place nuts into a food processer and process until broken down and crumbly. Add coconut, dates, oats, and cocoa continue to process until mixture is sticky and well combined. Be careful not to over process as its nice to have texture and different sized “bits” in your base crust.Press the base mixture into the bottom of your pan or dish evenly. Refrigerate while you prepare the jam layer.
Jam Layer
- In a saucepan, add berries and honey. Bring to a boil then reduce to a simmer and cook for 5-10 minutes until thickened and berries are broken down.Stir in chia seeds, continue to simmer for a further 3-5 minutes or until thick and the chia seeds have swelled up.Pour jam into a small bowl and place in the freezer for 10-15 minutes to cool and thicken.Remove the jam from the freezer and sir through the desiccated coconut.Spread the jam evenly over the base layer. Set aside.
White Chocolate Topping
- Place the white chocolate chips and coconut oil to a microwave-safe bowl and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and coconut oil together.Remove from the heat and stir in the desiccated coconut.Pour over the jam layer and smooth out. Refrigerate for 1-2 hours until firm and set.Cut into 16 squares, before slicing, allow the slice to sit at room temperature for about 10 minutes. For clean, sharp cuts, run your knife under hot water, then dry it off before slicing. This method ensures smooth cuts through the white chocolate topping and the jam layer.
