Pineapple Popsicles

These Pineapple Popsicles taste like frozen piña colada bites. They are made with fresh pineapple slices coated in 2 types of chocolate. They are the perfect, no bake dessert or snack. Or a fun treat for parties, potlucks, family gatherings, or snack on them straight from the freezer!
I know, I know. I'm a sucker for chocolate covered anything, and now it's pineapple's turn. These chocolate pineapple bites are the perfect balance of refreshing, decadent, and sweet (but not too sweet!)
They are sweet, tangy and melt in your mouth delicious!  Use fresh pineapple for best results, however, you can use canned pineapple too if preferred. A great treat to make with any fresh fruit!
It’s shocking how good these are! If you let them thaw a little bit before snacking, they become the perfect texture. These babies are the perfect ‘good-for-you’ sweet treat that will leave you feeling satisfied and help to curb sugar cravings while still being healthy!
That’s really the trick with eating healthier, its not limiting or denying yourself yummy things, its about ADDING good stuff so you don’t crave the ‘not-so-good’ high sugar, low nutrient things that can wreck health and amp up cravings even more.
Its about making sure you get all the good nutrients you need with some extra sweets snuck in. Doesn’t get any better than that.

Equipment

  • 20 skewers

Ingredients

  • 1 pineapple, peeled and cored
  • 1 cup milk chocolate chips
  • 1/2 tablespoon coconut oil

White Chocolate Drizzle

  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil
  • 1/2 cup desiccated coconut, toasted

Instructions

  • Line two baking trays with a sheet of parchment paper and set aside.
    Slice pineapple into approximately ½ inch thick wedges. Gently pat each piece dry with a paper towel. Once dry, place a skewer in each piece.
    To melt milk chocolate, add chocolate chips and ½ tablespoon coconut oil to a microwave safe bowl and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth. Repeat until the chocolate is fully melted.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Dip each pineapple piece in the melted chocolate, using a spoon to ensure each piece is evenly coated. Place in the freezer for about 5 minutes to allow the chocolate to set.
    To toast your coconut, spread coconut evenly on a baking tray. Place in the oven at 350°F for about 4-5 minutes or until golden brown.
    Melt white chocolate by combining white chocolate chops and 1 teaspoon coconut oil and repeating the process outlined above.
    Drizzle the popsicles with white chocolate and sprinkle with toasted coconut. Place in the freezer for about 30 minutes to fully harden.
    When ready to serve remove from freezer for 10-15 minutes to soften a bit before eating.
