Crispy Chocolate Coconut Crunch Cups
Ingredients
- 1 cup rice crispy cereal
- 1/2 cup peanut (or any nut or seed) butter
- 1/2 cup coconut oil
- 1/2 cup cocoa powder
- 1/2 cup desiccated coconut
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
Instructions
- Line a 12-hole muffin tin with parchment liners and set aside. Or use a silicon muffin pan.In a medium saucepan over a very low heat, melt together the coconut oil, peanut butter and honey. Once melted, remove from heat and stir in the cocoa powder, coconut and vanilla extract. Lastly, add rice crispy cereal and fold in.Divide mixture up between 10 muffin cups. Spread out smooth with the back of a spoon.Freeze for 15 minutes until set.Store in a sealed container in the freezer for up to a week or freezer for up to 3 months.
