You must know by now that I’m a big fan of a no-bake recipe. ANY no bake recipe to be exact. If I don’t have to turn the oven on, it’s a big win for me.

And these raspberry cheesecake brownie bars are one of my favourites.

Not only are the brownies incredibly easy to make, they also use just a few whole-food ingredients. They are gluten-free, refined sugar-free, dairy-free and a great healthy treat.

These gorgeous looking bars are the perfect healthy sweet treat. They take 10 minutes to make, and are great for taking on-the-go. Packed with protein, naturally sweetened and bursting with fruity flavour they are a healthy and delicious dessert or snack.

Easily customizable, you can add your own choice of nuts or dried fruit. Quickly whipped up in the blender, you can always have on hand some healthy, tasty any time snacks.

They are a great snack to have in the fridge when you need a sweet treat but want something that isn’t full of ultra-processed ingredients. Much better than reaching for something unhealthy and loaded with sugar and/or other nasty chemicals.

This is called the “addition” diet which is all about adding foods into your diet that ‘contribute’ to your health balance and enhancing meals and snacks by incorporating nutrient-dense options.

Raspberry Cheesecake Brownie Bars

These no-bake Raspberry Cheesecake Brownie Bars have two delicious layers! A creamy,dairy-free, “cheesecake” raspberry layer on top, and brownie layer on bottom.
Whether you are looking for a quick snack, a post-workout treat, or a healthier dessert option,these delicious brownies are a great option. They are naturally sweetened with dates and raspberries.

Ingredients

Base Crust

  • 1 1/4 cups almonds or pecans, raw or roasted
  • 2 cups dates, soaked 30 minutes and drained
  • 1/3 cup cocoa powder
  • 2 teaspoons vanilla extract

Cheesecake Layer

  • 1 cup cashews, soaked 3+hours and drained
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1 cup raspberries, frozen
  • 3 tablespoons honey or maple syrup

Topping

  • 1/2 cup fresh raspberries

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.

Brownie Layer

  • Line a 8 x 8”baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a food processor or blender, pulse together almonds, dates, cocoa powder, and vanilla extract. Continue to pulse, scraping down the sides when needed, until a thick"dough" forms.
    Be careful not to over process as its nice to have texture and different sized “bits” in your brownie base.
    Press the base mixture into the bottom of your pan or dish evenly. Refrigerate while you prepare the filling.
     
     

Cheesecake Layer

  • Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Place all filling ingredients, cashews, hardened coconut cream, raspberries and honey into the food processor and process until smooth and creamy. Depending on the power of your blender this might take a few minutes. Stop blending to scrape the sides and continue to blend until very smooth.
    Taste test and add more honey if you think it needs it.
    Remove the pan from the fridge, and pour the cheesecake layer on top, smoothing with a spatula or back of a spoon.
    Give the fresh raspberries a rough chop, then place on top of the cheesecake layer.
    Bring the pan to the freezer, and let set for at least 2 hours before removing to slice into 16squares. You can store in the fridge or freezer. Serve chilled, the bars will begin to soften at room temperature.
    Store in fridge for up to 1 week or freezer for up to 3 months.
