Ok ok, so my childhood didn’t consist of peanut butter and jelly sandwiches because I was too busy eating marmite toast for breakfast and lunch! Now as an adult who is a complete foodie, I cannot keep my hands off of these peanut butter cups filled with jam. They. Are. So. Good. Yes I am into more extravagant recipes than peanut butter and jelly cups when I say I’m a “foodie”, but can you pass up one of these bad boys? No, didn’t think so 😉Just 3 simple ingredients to make these tasty little peanut butter and jelly cups. A little bit sweet + a little bit salty. Use any nut butter that makes you happy.PB & J is such a classic flavor combination. I just couldn’t resist turning it into a healthy snack full of protein, healthy fats, and no refined sugars.These creamy,delicious peanut butter and jelly cups are super simple to make and are PERFECT when you are craving something salty sweet. I LOVE simple recipes. Easy peasy. Simply mix up the nut butter + coconut oil, create your layers, and place in freezer to set. Keep them stored in an airtight container in the freezer and pop one out whenever you’re in the mood for a snack (or dessert, or meal…).

Ingredients
- 1 1/4 cups peanut butter (or almond or cashew butter)
- 1/2 cup coconut oil, melted
- 1/2-3/4 cup jam or jelly -store bought or homemade chia jam recipe below in notes
Optional
- Pinch or two of flaky salt
Instructions
- Line muffin tin with 12 cupcake liners or arrange 12 silicone cupcake liners on baking tray. For a mini version of these cups, you could use a silicone mini muffin tray.In a medium size bowl mix together peanut butter and melted coconut oil. Whisk until creamy smooth. Spoon one tablespoon of peanut butter mixture into each prepared muffin liner. Place in freezer for 10 minutes. When you are setting the bases in the freezer, don’t let them go completely hard. You want them to still be soft to the touch, this will help the top layer stick to the base layer when freezing the cups at the end.Remove from freezer and spoon two teaspoons of jam into the middle of each peanut butter layer. Use back of spoon to gently flatten. Note: When dolloping the jam onto the bases, make sure that your jam doesn’t spread to the sides. You want to leave a small gap between the edges and the jam, so the jam doesn’t spill out and it’s all encased when the peanut shell hardens.Top with remaining peanut butter mixture, one tablespoon in each cup, to cover jam. If adding coarse salt on top, add after cups have been in the freezer for about five minutes to harden just a bit. Otherwise, the salt may just sink into the soft mixture.Place in freezer for at least 30 minutes to harden. Pop out of the molds or peel off the liners.Store in air-tight container in freezer (or fridge if you prefer a softer texture.)
