Coconut Crispy Treats
These no-bake coconut crispy treats are an awesome snack for both children and adults and are excellent quick and easy dessert that’s healthy too!You can drizzle chocolate over the top of them or dip them in chocolate to dress them up. I used toasted coconut in this recipe but you can use un-toasted shredded coconut if you prefer. Toasting the coconut gives it more crispiness.This recipe is the perfect treat if you love coconut like I do. Ingredients
- 2 cups desiccated coconut, toasted (optional)
- 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
Instructions
- Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Toast coconut in a large cast iron skillet over low heat.Once toasted, pour into a medium bowl and set aside.Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.Melt coconut oil over low heat until melted and add to bowl.Add hardened coconut cream along with coconut oil, honey and vanilla extract to bowl with the toasted coconut. Mix until well combined.Press the coconut mixture down evenly into the lined pan.Refrigerate coconut crispy treats for 1-2 hours or until they are set and ready to cut.Cut into 2-inch squares and serve.
