Cashew Lime Protein Snack Balls

If you want something sweet and satisfying, this cashew lime protein snack ball recipe is easy to make, full of flavor, and healthier than store-bought.
They taste so good, you would never believe they were good for you – that might be my favorite thing about these coconut protein balls. My second favorite thing? They are no-bake, so it’s about as low-effort as making a dessert can get.
They make for easy grab-and-go snacks, an excellent treat to gift to friends, or serve as desserts. I’m a big fan of coconut and keeping a batch of these in my fridge has definitely helped keep the chocolate cravings at bay.
If you are looking to upgrade your candy selection, coconut is a great ingredient to incorporate into your recipes. Not only is it naturally sweet, but it’s also a source of healthy fat, helps to keep your teeth and bones healthy, and can even keep you hydrated.
Only six healthy ingredients too! Cashews, dates, coconut, almond butter, protein powder and the zesty flavour of lime. No added sugar, no ingredients you can't pronounce. Just real wholesome goodness! The best part is how simple they are to make. Throw them up in a food processor and roll!
So simple to make these healthy no-bake snacks are gluten free, dairy free and  are perfect for a quick snack or dessert or to pack in a lunchbox or share with friends!

Moreish snack balls, bliss balls, truffles, energy bites, call them what you like. They are a perfect little nutrient-dense bite for a satisfying and are seriously SO GOOD. They make the perfect gift for any of your health-conscious or chocolate-loving friends too.

Ingredients

  • 1 cup cashews soaked 3+ hours and drained
  • 3/4 cup dates, soaked 30 minutes and drained
  • 1/2 cup almond (or any other nut) butter
  • 1/2 cup desiccated coconut, toasted
  • 2 scoops protein or collagen powder
  • 1-2 limes, juice and zest, depending on how lime-y you prefer
  • Few drops green food colouring - or if you wish to make your own natural green food colouring - cook tender, greens (such as spinach) in a tiny bit of water for about a minute.   Puree the greens or mash with a fork to get a very concentrated green liquid. You will only need a few drops. 

Chocolate Coating

  • 1 cup white chocolate chips, divided
  • 1 tablespoon coconut oil

Optional Toppings

  • Chopped nuts
  • Shredded coconut
  • Lime zest

Instructions

  • Place cashews in a food processor and process until broken down and crumbly. Add the dates, almond butter, coconut, protein powder, lime juice and zest and continue to process until mixture is sticky and well combined.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your energy balls.
    Use a large cookie scoop to portion the 12-14 balls depending on your preferred size. The mixture may be a little crumbly, use your hands to press them firmly together. Place in the freezer while you melt the chocolate.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Dunk each chilled ball into the melted chocolate using one or two forks or a spoon, or skewer with a toothpick like a cake pop.
    Dip in the melted chocolate, allow to drip clear, then set on a cooling rack, with a catch parchment underneath. Dip twice if you wish or if you have left over chocolate drizzle a little on top of each ball.
    Top with your choice of toppings and freeze for 10 minutes on rack until the chocolate is set.
    Store in the refrigerator!
