Blueberry Coconut Protein Ice Cream
This blueberry ice cream recipe is made with juicy blueberries, coconut milk, sesame seed butter, protein powder and yogurt for a sweet healthy ice cream treat ready in minutes!My love (read: obsession) for home made ice cream continues to deepen, so I thought it was time for a fruity flavor made with a whole bunch of my favorite ingredients involved. The most obvious fave is the source of that beautiful purple hue and my favorite berry: blueberries (but you could make this recipe with any other berry too!) Ingredients
- 1 cup blueberries, fresh or frozen
- 1 cup coconut milk (or milk of choice)
- 1/2 cup coconut yogurt
- 2 tablespoons tahini (sesame seed butter) or any other nut butter
- 1 tablespoon honey or maple syrup
- 1 scoop protein or collagen powder
- 1/2 teaspoon vanilla extract
Toppings & Mix Ins

Instructions
- Combine blueberries and honey in a small saucepan. Bring to a boil, reduce to a simmer, simmer 8-10 minutes until thickened.Blend the blueberries with the rest of the ingredientsuntil smooth and creamy.You can eat it as soft serve or freeze it further soit becomes firmer. If fully frozen let it sit for 15-20 minutes to soften up.Top with your chosen toppings.
