Ingredients
- 1 1/2 cups strawberries, fresh or frozen
- 1 cup almond flour
- 1/3 cup cashew (or any other nut) butter
- 1/2 cup any protein or collagen powder
- 1/4 cup honey or maple syrup
- 4 tablespoons any milk
- 2 tablespoons coconut oil, melted
For coating (optional)
- 2 tablespoons Strawberry freeze dried powder
- Desiccated coconut
Instructions
- Place strawberries and honey in a small saucepan.Cook over low to medium heat for 10-15 minutes, stirring frequently, until the strawberries break down and a thick syrup forms. Remove the sauce from the heat and allow to cool completely.In a mixing bowl place the strawberry sauce, almond flour, cashew butter, protein powder, milk and honey and stir well until well combined.Stir until the dough comes together into a moist, soft dough that you can roll into balls. If too dry add 1-2 tablespoons of milk. If too wet, add a bit more almond flour or protein powder, 1 teaspoon at a time.Grease your hands with oil – the dough is a bit sticky – roll into 12 balls and roll each bite into freeze-dried strawberry powder or coconut to coat.Keep the balls in an airtight container in the freezer until ready to serve.
