Strawberry Protein Balls

These Strawberry Protein Balls are the best fruity protein snack to fix your sweet tooth and fill you up with 6 grams of protein per energy ball. They are one of the easiest things to make, and are a perfect little nutrient-dense bite for a satisfying and beneficial snack!  After all, who doesn’t love a good protein/energy ball or bar?

Ingredients

  • 1 1/2 cups strawberries, fresh or frozen
  • 1 cup almond flour
  • 1/3 cup cashew (or any other nut) butter
  • 1/2 cup any protein or collagen powder
  • 1/4 cup honey or maple syrup
  • 4 tablespoons any milk
  • 2 tablespoons coconut oil, melted

For coating (optional)

  • 2 tablespoons Strawberry freeze dried powder
  • Desiccated coconut

Instructions

  • Place strawberries and honey in a small saucepan.
    Cook over low to medium heat for 10-15 minutes, stirring frequently, until the strawberries break down and a thick syrup forms.
    Remove the sauce from the heat and allow to cool completely.
    In a mixing bowl place the strawberry sauce, almond flour, cashew butter, protein powder, milk and honey and stir well until well combined.
    Stir until the dough comes together into a moist, soft dough that you can roll into balls. If too dry add 1-2 tablespoons of milk. If too wet, add a bit more almond flour or protein powder, 1 teaspoon at a time.
    Grease your hands with oil – the dough is a bit sticky – roll into 12 balls and roll each bite into freeze-dried strawberry powder or coconut to coat.
    Keep the balls in an airtight container in the freezer until ready to serve.
