Homemade Good Health Bars

Meet one of my favorite healthy no bake bars recipe. Delicious and easy to make with basic pantry ingredients. Enjoy them for a protein-packed breakfast, a healthy anytime snack, or even dessert. The wholesome, nutrient-rich ingredients in these chewy, nutty bars make one delicious bite that satisfies hunger!
With superfoods like hemp, plus almonds, walnuts and coconut and coated in dark chocolate, this recipe is a super healthy treat!
Packed with vital nutrients, sweetened with dates which also give them their beautiful fudgy texture. The bars are high in both protein and healthy fats to keep you satiated and provide lots of healthy energy.
These bars are not only a delicious snack but they are also my favourite way to use up any ingredients that I have left over in the pantry. While I recommend to try these out as they are; you can experiment by swapping out nuts and seeds for other variations. But keep in mind to stick to the ratios or the bars will have a completely different texture.
If you know you have a busy week coming up, make a batch of these nutritious, energy-boosting bars for when you are rushing out the door without time for a proper breakfast. They happily pass as a quick breakfast, or a perfect snack. I love to pack these bars for road trips and flights, and moms who make these bars regularly for their kids. They are a big hit with all ages.
Super simple to put together, this recipe can also be cut into squares or rolled into bite-sized balls according to your preference.
Even though these bars already contain so many amazing nutrients, and you can also add/swap different superfood/protein/collagen powders too. Making them at home with whole food ingredients avoids the preservatives in store-bought bars.
I did drizzle melted chocolate on top and then some flakes of sea salt because…well…yum!

Ingredients

  • 1 1/2 cips almonds or walnuts or a mix (raw or roasted)
  • 1 1/2 cups dates, soaked 30 minutes and drained
  • 1/2 cup seeds – any mix of pumpkin, sunflower, chia, sesame
  • 1/2 cup oats, instant or quick
  • 1/2 cup desiccated coconut
  • 1/2 cup hemp seeds
  • 1/4 cup cocoa or cacao powder
  • 1/4 cup any nut butter
  • 1 teaspoon vanilla extract
  • sprinkle sea salt

Chocolate Drizzle

  • 1/2 cup chocolate chips
  • 2 teaspoons coconut oil

Instructions

  • Line an 8 x 5” loaf pan or similar sized dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place almonds into a food processer and process until broken down and crumbly. Add dates, seeds, oats, coconut, hemp seeds, cocoa, nut butter and vanilla and continue to process until mixture is sticky and well combined.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your bars.
    Press the mixture into the bottom of your pan or dish evenly. Refrigerate while you melt the chocolate drizzle.
     

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the bars from fridge and drizzle the chocolate over the top with a spoons. Sprinkle with sea salt.
    Place in fridge for chocolate to set then remove from pan using the parchment paper handles and cut into 10-12 bars or more smaller squares.
    Store in an airtight container in the fridge for up to a week or freezer for up to 3 months.
