Instead of relying on lots of refined sugar, the recipe uses real strawberries for natural fruit flavour and sweetness, along with protein powder to make the creamy centre more satisfying.

Real Strawberries Bring the Flavour

Fresh strawberries are the star of these little bites. They add natural sweetness, beautiful colour and that unmistakable fresh strawberry flavour. They are also a delicious source of vitamin C and other beneficial plant compounds.

For the smoothest texture, strawberries can be blended into a puree before being added to the whipped cream. If you would like little bursts of fruit throughout the candy, finely chop a few extra strawberries and fold them through at the end.

If strawberries are not in season, frozen strawberries can also be used. Thaw them first and drain away excess liquid before blending.

For an even stronger strawberry flavour, a little freeze-dried strawberry powder works wonderfully too.

Why Add Protein?

Vanilla protein powder is perfect for this recipe because it complements the strawberries without overpowering them.
Strawberry or unflavoured protein powder can also work well.

Dairy Cream or Coconut Cream?

You have two delicious options.

Heavy dairy cream creates an airy, rich and mousse-like texture. It is wonderfully creamy and lets the strawberry flavour shine.
Full-fat coconut cream is an excellent dairy-free alternative. It creates a rich, smooth texture while adding a subtle tropical note that pairs surprisingly well with strawberries.

If you are using coconut cream, make sure you use the thick part of a chilled can and avoid adding the watery liquid underneath.

Both versions freeze beautifully.

Make Them Look Like Candy

Part of the fun of this recipe is the presentation.  You can use a lined tray and cut into small squares or pipe the mixture into small swirls onto a baking paper-lined tray. Or you can use silicone candy or mini muffin moulds for more uniform shapes.

Once frozen, you can leave them as they are or take them one step further.

Dip them partially in melted dark or white chocolate.
Drizzle them with chocolate.
Sprinkle them with freeze-dried strawberry powder.
Add finely chopped pistachios.
Or sprinkle with coconut for a pretty pink-and-white finish.

For a strawberry cheesecake-inspired version, add a little crushed freeze-dried strawberry and vanilla biscuit crumb to the topping.

Ingredients

Option 1 (Dairy)

  • 1 1/2 cups heavy whipping cream

Option 2 (Dairy-Free)

  • 1 1/2 cups chilled full-fat coconut cream

Plus

  • 1 scoop vanilla protein powder
  • 1/2 cup fresh strawberries, blended or mashed into a puree
  • 1-2 tablespoons maple syrup, honey or powdered monk fruit sweetener, to taste
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Optional Strawberry Boost

  • 2 tablespoons freeze-dried strawberry powder

Optional Toppings

  • Freeze-dried strawberry powder
  • Finely chopped pistachios
  • Shredded coconut
  • Cacao nibs
  • Fresh strawberry pieces

Instructions

  • Chill a mixing bowl and beaters for about 10 minutes.
    Wash and dry the strawberries thoroughly. Puree them until smooth.
    Add the heavy cream or chilled coconut cream to the bowl.
    Whip until soft peaks begin to form.
    Add the protein powder, strawberry puree, sweetener, vanilla and salt.
    Continue whipping until firm peaks form and the mixture is light and fluffy.
    If using freeze-dried strawberry powder, gently fold it through.
    Using a piping bag fitted with a star nozzle to pipe small dollops onto a baking paper-lined tray. Or just spoon small dollops on to the baking tray or into silicone moulds.
    Or transfer the mixture to the a lined loaf pan and smooth out.
    Freeze for 2–3 hours, or until firm. If using the one pan method, cut into 12 or more small squares. Or if using a mold, simply un mold the bites.
    Store in an airtight container in the freezer for up to 1 month. Allow the bites to soften for 1–2 minutes before eating for a softer, mousse-like texture.
