Strawberry Whipped Cream Protein Bites

Ingredients

Option 1 (Dairy)

  • 1 1/2 cups heavy whipping cream

Option 2 (Dairy-Free)

  • 1 1/2 cups chilled full-fat coconut cream

Plus

  • 1 scoop vanilla protein powder
  • 1/2 cup fresh strawberries, blended or mashed into a puree
  • 1-2 tablespoons maple syrup, honey or powdered monk fruit sweetener, to taste
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Optional Strawberry Boost

  • 2 tablespoons freeze-dried strawberry powder

Optional Toppings

  • Freeze-dried strawberry powder
  • Finely chopped pistachios
  • Shredded coconut
  • Cacao nibs
  • Fresh strawberry pieces

Instructions

  • Chill a mixing bowl and beaters for about 10 minutes.
    Wash and dry the strawberries thoroughly. Puree them until smooth.
    Add the heavy cream or chilled coconut cream to the bowl.
    Whip until soft peaks begin to form.
    Add the protein powder, strawberry puree, sweetener, vanilla and salt.
    Continue whipping until firm peaks form and the mixture is light and fluffy.
    If using freeze-dried strawberry powder, gently fold it through.
    Using a piping bag fitted with a star nozzle to pipe small dollops onto a baking paper-lined tray. Or just spoon small dollops on to the baking tray or into silicone moulds.
    Or transfer the mixture to the a lined loaf pan and smooth out.
    Freeze for 2–3 hours, or until firm. If using the one pan method, cut into 12 or more small squares. Or if using a mold, simply un mold the bites.
    Store in an airtight container in the freezer for up to 1 month. Allow the bites to soften for 1–2 minutes before eating for a softer, mousse-like texture.
