Ingredients

Protein Bar Base

  • 1 cup oat flour  (oats blended to a flour)
  • 3/4 cup almond butter
  • 1/2 cup coconut butter, softened, store bought or homemade recipe below in notes
  • 1/3 cup vanilla protein powder
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk of choice, if needed
  • Pinch of sea salt

Optional Chocolate Topping

  • 1/2 cup dark chocolate chips
  • 2 teaspoons coconut oil
  • 1 tablespoon chopped toasted almonds
  • 1 tablespoon toasted coconut flakes

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    If your coconut butter is solid, soft by placing the jar in warm water for a few minutes or give it a burst or two in the microwave.
    In a medium bowl, combine the almond butter, softened coconut butter, maple syrup and vanilla extract. Stir until smooth and creamy.
    Add the oat flour, protein powder and sea salt. Mix until a thick dough forms.
    If the mixture feels too dry, add milk one tablespoon at a time until it comes together.
    Transfer the mixture into the prepared pan and press firmly into an even layer using the back of a spoon or spatula.
    Place in the refrigerator while preparing the topping.

Chocolate Topping (optional)

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    When the chocolate is melted, lift from the bars from the pan and slice into 8 bars or more smaller squares.
    Pour or drizzle over the bars and sprinkle with chopped almonds and toasted coconut before the chocolate sets.
    Refrigerate for1–2 hours until completely firm.
    Store in an airtight container in the refrigerator for up to one week or freeze for up to two months.

    Mix shredded coconut into the base for additional texture.
