Birthday Cake Protein Bark
Ingredients
- 1 cup cottage cheese
- 1 scoop vanilla protein powder
- 1/2 cup cashew or macadamia nuts
- 1/4 cup almond flour
- 2-3 tablespoons maple syrup or honey (to taste)
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional, for cake batter flavour)
- 2 tablespoons rainbow sprinkles
Optional Toppings
- Extra sprinkles
- White chocolate drizzle
- Crushed freeze-dried berries
Instructions
- Line a tray or plate with baking paper.Add cottage cheese, protein powder, almond flour, maple syrup, vanilla, and almond extract (if using) to a blender or food processor.Blend until completely smooth and creamy.Stir through half the sprinkles and the chopped nuts..Spread the mixture onto the lined tray into a rectangle about ½-inch thick.Sprinkle remaining sprinkles over the top.Freeze for 2–3 hours or until firm.Break into 10-12 bark pieces and store frozen.Keep in an airtight container in the freezer for up to 2 weeks.
