Ingredients

  • 1 cup cottage cheese
  • 1 scoop vanilla protein powder
  • 1/2 cup cashew or macadamia nuts
  • 1/4 cup almond flour
  • 2-3 tablespoons maple syrup or honey (to taste)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional, for cake batter flavour)
  • 2 tablespoons rainbow sprinkles

Optional Toppings

  • Extra sprinkles
  • White chocolate drizzle
  • Crushed freeze-dried berries

Instructions

  • Line a tray or plate with baking paper.
    Add cottage cheese, protein powder, almond flour, maple syrup, vanilla, and almond extract (if using) to a blender or food processor.
    Blend until completely smooth and creamy.
    Stir through half the sprinkles and the chopped nuts..
    Spread the mixture onto the lined tray into a rectangle about ½-inch thick.
    Sprinkle remaining sprinkles over the top.
    Freeze for 2–3 hours or until firm.
    Break into 10-12 bark pieces and store frozen.
    Keep in an airtight container in the freezer for up to 2 weeks. Let sit for 1–2 minutes before eating for best texture.
