No-Bake | High-Protein | Freezer-Friendly
If you love simple treats that look impressive but take almost no effort to make, protein bark is about to become one of your go-to recipes. This Raspberry Coconut Protein Bark is creamy, slightly tart and naturally sweet. It’s refreshing, nourishing, and perfect to keep in the freezer for when sweet cravings strike.
But first – what exactly is bark?
Bark is a type of dessert made by spreading fruit like bananas, dates or melted chocolate (or a creamy base) into a thin layer, adding toppings, and letting it set until firm. Once hardened, it’s broken into rustic shards or “bark” pieces. The beauty of bark recipes is their simplicity. There is no slicing perfectly shaped bars or complicated steps. Just spread, chill, and break.
Traditional dessert bark is often made with chocolate and candy toppings, but in the Blended Bites kitchen, we love creating versions that are both indulgent and nourishing. That’s where protein and whole ingredients come in.
This Raspberry Coconut Protein Bark starts with a creamy coconut layer blended with protein powder to give it structure and staying power. Coconut pairs beautifully with raspberry – the creamy richness balances the berries’ natural tartness, creating a flavor combination that feels both fresh and satisfying.
Raspberries also bring a natural brightness to the recipe. Their vibrant color and sweet-tangy flavor make each bite feel balanced rather than heavy. Plus, they add a boost of antioxidants and fiber.
Adding protein powder turns this from a simple dessert into a more balanced snack. Pairing protein with healthy fats helps keep you fuller longer and supports steady energy levels, rather than the quick sugar spike you might get from traditional sweets.
Another thing to love about bark recipes is how incredibly easy they are to customize. You can swap the fruit, adjust sweetness, or add toppings like nuts, seeds, coconut flakes or melted chocolate. Once you understand the simple bark concept, the variations are endless.
And of course, this recipe is completely no-bake. That means it’s perfect for warm days when you don’t want to turn on the oven, or when you need a quick treat to prepare ahead of time. Just a few minutes of mixing and melting, a little freezer time, and you have a beautiful treat ready to enjoy.
Store it in the freezer and grab a piece whenever you want something sweet, refreshing, and satisfying. It’s proof that healthy treats can still feel a little bit special. ✨
