Ingredients
1/2cupfreeze-dried raspberries
1/2cupcoconut butter, store bought or homemade recipe link below in notes
1/2cupcoconut oil
1/2cupdesiccated coconut
2-4tablespoonsmaple syrup or honey (to taste)
Optional Toppings
Extra shredded coconut
Freeze-dried raspberries, crushed
Chopped nuts
Chocolate drizzle
Instructions
Line a 8 x 8-inch baking pan, tray or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. In a coffee grinder or small food processor, process dried berries until they are a fine powder. Set aside.In a medium saucepan over a very low heat, combine coconut butter, coconut oil, desiccated coconut and sweetener. Stir frequently until all ingredients are well combined and melted.Pour about half of the mixture into the prepared baking pan. Add the raspberry powder to the remaining mixture in the pan and stir until well combine.Dollop the raspberry mixture over top the coconut mixture in the pan and swirl with a knife. Sprinkle with extra coconut or freeze-dried raspberries if desired.Freeze for 30 -45minutes, or until completely firm then break into chunks.Store in the fridgeup to 1 week or freezer for up to 3 months.Let sit for a few minutes before eating if stored frozen.
