Ingredients

  • 1 cup almond flour
  • 3/4 cup oat flour (or blended rolled oats)
  • 1/2 cup mashed raspberries (fresh or frozen, thawed)
  • 2 scoops chocolate or vanilla protein powder
  • 1/4 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 3 tablespoons coconut oil, melted
  • 2-4 tablespoons milk of choice (as needed)
  • 1 teaspoon vanilla extract

Optional Add-Ins Or Toppings

  • Dark chocolate chips
  • Freeze-dried raspberries
  • Chopped nuts

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a medium bowl, combine almond flour, oat flour, protein powder and cocoa powder.
    Add honey, melted coconut oil, vanilla extract and mashed raspberries.
    Mix well until a thick, fudgy dough forms. If needed, add milk one tablespoon at a time until the mixture is soft and pressable.
    Press the mixture fnto the prepared dish and smooth the top.
    Add any favorite toppings and gently press in.
    Refrigerate for at least 2–3 hours, or until fully set.
    Slice into 10-12 bars or more smaller squares and enjoy.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
