Today I bring you a recipe that is fast, easy and delicious. It requires few ingredients, minutes of melting/stirring time and no candy thermometer is required! Its creamy, rich, and decadent yet healthy!

I love delicious homemade healthy candy recipes. It’s so fun to recreate nostalgic favorites with healthier ingredients for treats you can feel good about eating. Even better when there is no baking or cooking required! No-bake dessert ideas are some of my favorite kinds of recipes. I’ve always been of the opinion that fudge should be easy to make – like very easy. Never ever have I bothered to fuss over a candy thermometer for fudge, because it’s so unnecessary and stress-inducing.

My old, unhealthy favorite fudge recipe was pretty easy, but my new super easy chocolate fudge recipe is even EASIER. Like, no cooking necessary, just some gentle melting. That’s my kind of easy, and this new chocolate peanut butter fudge is based on that simply delicious recipe. This recipe combines a chocolate layer, then a peanut butter drizzle is swirled in for a yummy, sweet, salty, sink-your-teeth-in treat. With just a handful of ingredients, this fudge is an easy treat or snack, to keep stashed away for …well, any reason!

This fudge recipe is like regular fudge – super rich, uber decadent – but this one is secretly healthy and guilt-free!  Yup, that means no butter, no white sugar and no sweetened condensed milk…  just pure, fudgy, nutty, chocolatey goodness. Healthy fats like the ones in this recipe have become popular with the keto movement. No longer is eating a mouthful of fatty goodness frowned upon. After decades of playing the villain, humans once again embraced healthy, real food fats.

Incredibly healthy foods with fats like coconut come together in this soft, salty-sweet fudge, made with wholesome ingredients. There are 2 types of coconut in this recipe as it is considered the most nutritionally complete food source in the world, making it a wonderful addition to your healthy eating.

This recipe is the perfect treat if you love coconut like I do.  I’m obsessed with coconuts, they are my favorite ingredient in desserts and healthy snacks.

The world is going coconuts. Following the popularity of coconut water, a broad spectrum of foods derived from the humble coconut are available. It now comes in a variety of forms from water to milk, cream, sugar, butter, oil, flour, dried and shredded allowing for a variety of creative ways to add coconut to a healthy diet.

Coconut contains a unique type of medium chain saturated fat called lauric acid that research shows raises HDL or “good”cholesterol levels, which lowers overall heart disease risk. As a plant food, coconuts also contain disease-fighting phytochemicals or antioxidants. Research suggests that coconut products helps boost metabolism which is helpful if excess body fat needs to be lost.

I put some into my dogs dinner regularly. Chocolate Peanut Butter Swirl Protein Fudge

Ingredients

Fudge Base

  • 3 cups chocolate chips, dark, milk or semi-sweet
  • 1 13.5 oz can coconut cream or milk
  • 1/2 cup tahini (sesame paste) or any other nut or seed butter
  • 1/4 cup protein or collagen peptides powder
  • 1 teaspoon vanilla extract

Peanut Butter Swirl

  • 1/4 cup peanut butter
  • 1/4 cup coconut oil

Instructions

Fudge Base

  • Line a 8×8-inch loaf pan with parchment paper, or alternatively line a mini muffin tin with muffin liners. Or use a silicon baking pan or candy mold.
    Melt the chocolate chips in a medium saucepan over low heat. Once melted whisk in the coconut milk and tahini. Take off heat and add protein powder and vanilla extract and continue to mix until well combined.
    Pour mixture into the prepared pan or mold.
    Place in fridge to firm up while you prepare the peanut butter swirl.  

Peanut Butter Swirl

  • Melt together the peanut butter and coconut oil in a small saucepan or in the microwave in a small dish with 15 second bursts and stir until combined.
    Drizzle over the chocolate base and use a toothpick or knife to swirl it in. Be careful not to over swirl as it may get muddy looking.
    Place in the refrigerator and chill until firm, about 2 hours.
    Let soften at room temperature for about 10 minutes before cutting into squares with a sharp knife.
    Store in the refrigerator for up to 1 week or freezer for up to 3 months.
