Ingredients

  • 1 cup almond flour (almonds blended to a flour)
  • 1 cup rolled oats
  • 1/2 cup cream cheese
  • 1/2 cup freeze-dried strawberries
  • 1/4 cup protein or collagen peptides powder, plain or vanilla
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons almond milk (as needed)

White Chocolate Drizzle

  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Take the cream cheese out of the fridge about 10–15 minutes before starting. Letting it come to room temperature makes it easier to blend into the mix.
    Place the freeze-dried strawberries in a zip-top bag and crush them using a rolling pin or your hands. You want a mix of fine powder and small chunks for texture and flavor.
    In a medium mixing bowl, combine the almond flour, oats, cream cheese, protein powder, honey, vanilla extract and milk. Mix until everything is well combined. Add the milk a tablespoon at a time until a thick dough forms.
    Taste test and add more honey or vanilla extract if you think it needs it. Add the freeze-dried strawberries last so little chunks remain for little burst of flavour.
    Using a cookie scoop or your hands, roll the dough into 1-inch balls. You should get about 12–14 balls depending on the size.
