Strawberry Chia Protein Parfait
Ingredients
- 1 cup fresh or frozen (thawed slightly) strawberries
- 1 cup coconut milk (or milk of choice)
- 1/2 cup chia seeds
- 1/2 cup cottage cheese
- 1/2 cup thick Greek-style yogurt
- 2 tablespoons honey or maple syrup
- 2 scoops protein or collagen peptides powder
- 1 teaspoon vanilla extract
- Freshly chopped strawberries to garnish
Instructions
- In a blender add strawberries, milk, cottage cheese, yogurt, honey, protein powder and vanilla and blend until smooth.Place the chia seeds in a medium bowl and pour strawberry mixture over the seeds. Whisk until well combined. Allow to sit for about 5 minutes, then whisk together again.Refrigerate (covered) for at least 4 hours or overnight.Divide your mixture equally among two serving cups and garnish as desired.Refrigerate covered tightly for up to 3 days.
