Ingredients
1cupfresh or frozen (thawed slightly) strawberries
1cupcoconut milk (or milk of choice)
1/2cupchia seeds
1/2cupcottage cheese
1/2cupthick Greek-style yogurt
2tablespoonshoney or maple syrup
2scoopsprotein or collagen peptides powder
1teaspoonvanilla extract
Freshly chopped strawberries to garnish
Instructions
In a blender add strawberries, milk, cottage cheese, yogurt, honey, protein powder and vanilla and blend until smooth.Place the chia seeds in a medium bowl and pour strawberry mixture over the seeds. Whisk until well combined. Allow to sit for about 5 minutes, then whisk together again.Refrigerate (covered) for at least 4 hours or overnight.Divide your mixture equally among two serving cups and garnish as desired.Refrigerate covered tightly for up to 3 days.
