Strawberry Chia Protein Parfait

Made with strawberries, coconut milk, cottage cheese and yogurt plus a serving of protein powder. My favourite chia parfait recipe - packed with nutrition – chock full of omega 3, magnesium, fibre, calcium and natural electrolytes. Easy to prepare and the high fibre, protein-rich content will keep you fueled all day.

Ingredients

  • 1 cup fresh or frozen (thawed slightly) strawberries
  • 1 cup coconut milk (or milk of choice)
  • 1/2 cup chia seeds
  • 1/2 cup cottage cheese
  • 1/2 cup thick Greek-style yogurt
  • 2 tablespoons honey or maple syrup
  • 2 scoops protein or collagen peptides powder
  • 1 teaspoon vanilla extract
  • Freshly chopped strawberries to garnish

Instructions

  • In a blender add strawberries, milk, cottage cheese, yogurt, honey, protein powder and vanilla and blend until smooth.
    Place the chia seeds in a medium bowl and pour strawberry mixture over the seeds. Whisk until well combined. Allow to sit for about 5 minutes, then whisk together again.
    Refrigerate (covered) for at least 4 hours or overnight.
    Divide your mixture equally among two serving cups and garnish as desired.
    Refrigerate covered tightly for up to 3 days.
