Chocolate lovers, we have something to celebrate! Today, we are jumping into the world of healthier snacks with a QUICK and easy 4-ingredient almond butter protein fudge bites recipe. This sweet treat is not only easy to make but it’s actually good for your mind, body and soul.
Sometimes I look at my recipe blog/site and laugh that I dedicate so much of my time to a never ending stream of chocolate based snacks. I have zero issue with this achievement, nor do I plan to change it. Why would I? Chocolate is just the best and it deserves to nourish us in snack form.
Plus, chocolate isn’t just good for the soul. It can be good for us nutritionally speaking, too. Don’t get me wrong – fudge is fudge, and I definitely place it in the snack category…but choose yourself a good quality chocolate and pair it with whole food ingredients and some protein and you have yourself ‘healthier’ more nourishing fudge.
If you are looking for a super easy, speedy and delicious healthier treat that only calls for a handful of ingredients, you need to try this recipe! And once you try it you will want to make it time and time again. Whip up a batch in 15 minutes, freeze to harden, and store leftovers in the fridge so they are ready at a moment’s notice. Whether it’s for a pre-or post-workout energy boost or to satisfy that 3 o’clock snack craving these little bites are the golden ticket. It’s truly rich and delicious, and a little goes a long way.
Most conventional recipes for fudge call for copious amounts of heavily sweetened condensed milk along with the chocolate. Needless to say, the sugar content is through the roof.
I have ‘healthified’ this recipe so you are going to be using REAL good for you ingredients that add to your health not TAKE AWAY from it. It is super rich, uber-decadent – but secretly healthy and guilt-free! Yup, that means no butter, no cream, no refined sugar and no heavily sweetened condensed milk… just pure, fudgy, chocolatey goodness
Almond butter adds a creamy richness, complementing the smoothness of the melted chocolate chips. Its a blissful union of silky and indulgent, creating a dessert that feels like a luxurious treat.
Now, let’s talk taste. the combination of chocolate, almond butter, and a hint of vanilla extract makes for rich notes of chocolate that are perfectly balanced by the nutty hints of almond butter, while the vanilla extract adds a subtle, aromatic sweetness!!
To make these I have used a clever and convenient tool – silicone ice cube molds. These molds are not just for freezing water; they are versatile kitchen companions that add a touch of ease to our fudge-making process. The beauty of silicone molds lies in their flexibility, making it a breeze to pop out perfectly shaped fudge bites once they have set.
You can use so many different shapes-whether it’s classic squares, hearts, or even fun geometric shapes, the choice is yours! The flexibility of these molds makes it easy to remove the fudge bites without any mess or fuss. The key is to let the chocolates thaw a bit at room temp – they become velvety squares of fudge that effortlessly melt in your mouth.
Get creative with add-ins! Consider tossing in some chopped nuts, dried fruit, or a sprinkle of sea salt before chilling the fudge.
These additions add a fun crunch or chewiness, elevating the overall texture and flavor profile. Experiment with different combinations to find your signature twist on this classic recipe. For those with dietary restrictions or preferences, feel free to make substitutions.
Almond butter can be swapped with other nut butters like peanut or cashew or even tahini (sesame seed butter) – the flexibility of this recipe allows you to tailor it to your liking while still keeping it simple and delicious.
One little square of this delightful fudge makes me happy in an instant. It’s soft deliciousness and you are going to love this healthier candy.
