These healthy, no bake protein brownies are the perfect snack or sweet treat! Made with just a handful of ingredients, this recipe could not be easier. They  are so fudgy, chewy, and melt in your mouth good! Refined sugar free, packed with protein, energizing carbs, and healthy fats, these brownies make a great, balanced treat option! A sprinkle of sprinkles makes these brownies fun too. After all, sprinkles make everything better!

I have a special place in my heart for no bake desserts. They were the first kind of recipes I started experimenting with when I started making healthier treats. No bake brownies in particular, they somehow taste like you are eating brownie batter in a dense, chewy, fudgy brownie form. WILD.

This brownie recipe is just like the kind you buy, but oh so much better, without truckloads of refined sugar and no weird artificial flavours and preservatives. So much healthier and with way better taste and texture than anything you can buy at a store.

Protein is getting a lot of hype right now and for good reason. When I first started studying nutrition, I quickly hopped on the protein train. I try to aim for 30g of protein at each meal and ensure my snacks in between have a little. Another great thing about protein, is when you pair it with your sweet treats and desserts, it helps prevent blood sugar spikes.

There is protein powder in this recipe to make sure we get the satisfying component of eating a sweet healthy treat. I find if the treat is not balanced (not enough protein and lots of carbs), it leaves me hungry a couple of hours after but when there is sufficient protein I stay full and happy for longer.

Because of this, I love adding protein into my snacks and treats as it’s an easy way to hit those protein goals – and tastes amazing! The brownie layer is made from a almond flour, nut butter, cocoa, protein powder base which creates the chewy and fudgy texture that we all crave in a brownie! They are then layered with a luscious chocolate topping that is rich and decadent in all the best ways!

This recipe is an ideal treat that is perfect for placating your sweet tooth when you are on a healthier eating kick. Don’t get me wrong, these brownies aren’t diet food. They are, however, made out of nutrient-dense ingredients and are healthy. Keep some in your fridge or freezer to eat with any dessert or simply eat it them on their own.

Fudge Brownie Chocolate Protein Bars - Every chocoholic’s dream come true – and like me you will want to make them over and over (and over) again. Made with just a handful of good-for-you ingredients, they taste like a rich, fudgy brownie that will melt in your mouth!

Ingredients

  • 3/4 cup almond flour
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup cocoa powder
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons coconut oil, melted
  • 1-2 tablespoons any milk, if needed

Chocolate Topping

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil
  • Sprinkles

Instructions

  • Line a 7 x 5-inch loaf pan with parchment paper. Set aside.
    In a medium mixing bowl, add almond flour, peanut butter, honey, cocoa powder, protein powder, and coconut oil.
    Stir with a rubber spatula until it forms a dough that comes into a ball. It shouldn't be dry or too sticky. If too dry, add milk a tablespoon at a time and stir it in. If too wet, add more protein powder to firm it up.
    Press the dough into an even layer into the prepared loaf pan.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, pour on top of the bars and tilt the pan to spread it evenly.
    Sprinkle some plant-based sprinkles on top to decorate.
    Set in the freezer for1-2 hours to set. Slice into 8 bars or more smaller squares.  
    Store in fridge for up to1 week or freezer for up to 3 months.
