These no-bake chocolate energy bars are packed with protein and healthy fats. They make the perfect grab-and-go snack or post-workout treat!

Ingredients

  • 1 cup rolled oats
  • 1/2 cup crispy rice cereal
  • 1/2 cup desiccated coconut
  • 1/4 cup almond (or any other nut or seed) butter
  • 2 scoops protein or collagen peptides powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond (or any other) milk

Chocolate Topping

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • 1/2 cup peanuts, roasted, salted, crushed  

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a mixing bowl, combine rolled oats,rice cereal, coconut, almond butter, protein powder, honey and milk.
    Mix until well combined.
    The mixture should be slightly sticky butfirm enough to press into a pan. If it’s too dry, add a splash of milk; if toowet, add a little more oats.
    Taste-test and adjust sweetness ifnecessary.
    Press the mixture into the lined dish,ensuring an even layer.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, pour on top of bar base and top with flaky salt, crushed peanuts or your choice of topping.
    Place in fridge for chocolate to set.
    To serve, cut into 10 bars or more smaller squares.
