Ingredients
1cuprolled oats
1/2cupcrispy rice cereal
1/2cupdesiccated coconut
1/4cupalmond (or any other nut or seed) butter
2scoopsprotein or collagen peptides powder
1/4cuphoney or maple syrup
1/4cupalmond (or any other) milk
Chocolate Topping
1cupchocolate chips
1tablespooncoconut oil
1/2cuppeanuts, roasted, salted, crushed
Instructions
Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a mixing bowl, combine rolled oats,rice cereal, coconut, almond butter, protein powder, honey and milk.Mix until well combined.The mixture should be slightly sticky butfirm enough to press into a pan. If it’s too dry, add a splash of milk; if toowet, add a little more oats.Taste-test and adjust sweetness ifnecessary.Press the mixture into the lined dish,ensuring an even layer.
Chocolate Topping
Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, pour on top of bar base and top with flaky salt, crushed peanuts or your choice of topping.Place in fridge for chocolate to set.To serve, cut into 10 bars or more smaller squares.
