Cashew Butter Protein Snack Balls
Ingredients
- 3/4 cup cashew butter
- 1/2 cup almond, oat or coconut flour
- 1/4 cup coconut oil, melted
- 1 scoop protein or collagen powder
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Chocolate Drizzle Topping Optional
- 1/2 cup white chocolate chips
- 1 tablespoon coconut oil
- Dusting of cocoa powder
Instructions
- Use a food processor to mix the ingredients together. Or mix in a bowl by hand. If the mixture seems too dry add a little milk or water a tablespoon at a time until it comes together. Or if it seems to wet, add a little more flour or protein powder. Taste test and add a little more honey or vanilla extract if you think it needs it.Scoop the batter using a spoon into 10-12 or more balls. Place in fridge while you melt the chocolate topping (optional).
Chocolate Drizzle Topping Optional
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, drizzle over the snack balls using a spoon.Refrigerate the snack balls for 30 minutes or until cold.Store in an airtight container in the fridge for up to 2 weeks.
