Cashew Butter Protein Balls are an easy-to-make treat, These are my go-to snack whenever I am looking for an instant boost of energy or even when I just want to treat myself and my loved ones with a sweet dessert made healthy.

Ingredients
3/4cupcashew butter
1/2cupalmond, oat or coconut flour
1/4cupcoconut oil, melted
1scoopprotein or collagen powder
2tablespoonshoney or maple syrup
1teaspoonvanilla extract
Chocolate Drizzle Topping Optional
1/2cupwhite chocolate chips
1tablespooncoconut oil
Dusting of cocoa powder
Instructions
Use a food processor to mix the ingredients together. Or mix in a bowl by hand. If the mixture seems too dry add a little milk or water a tablespoon at a time until it comes together. Or if it seems to wet, add a little more flour or protein powder. Taste test and add a little more honey or vanilla extract if you think it needs it.Scoop the batter using a spoon into 10-12 or more balls. Place in fridge while you melt the chocolate topping (optional).
Chocolate Drizzle Topping Optional
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, drizzle over the snack balls using a spoon.Refrigerate the snack balls for 30 minutes or until cold.Store in an airtight container in the fridge for up to 2 weeks.
