Cashew Butter Protein Snack Balls

Cashew Butter Protein Balls are an easy-to-make treat, These are my go-to snack whenever I am looking for an instant boost of energy or even when I just want to treat myself and my loved ones with a sweet dessert made healthy.

Ingredients

  • 3/4 cup cashew butter
  • 1/2 cup almond, oat or coconut flour
  • 1/4 cup coconut oil, melted
  • 1 scoop protein or collagen powder
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Chocolate Drizzle Topping Optional

  • 1/2 cup white chocolate chips
  • 1 tablespoon coconut oil
  • Dusting of cocoa powder

Instructions

  • Use a food processor to mix the ingredients together. Or mix in a bowl by hand. If the mixture seems too dry add a little milk or water a tablespoon at a time until it comes together. Or if it seems to wet, add a little more flour or protein powder.
    Taste test and add a little more honey or vanilla extract if you think it needs it.
    Scoop the batter using a spoon into 10-12 or more balls. Place in fridge while you melt the chocolate topping (optional).

Chocolate Drizzle Topping Optional 

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, drizzle over the snack balls using a spoon.
    Refrigerate the snack balls for 30 minutes or until cold.
    Store in an airtight container in the fridge for up to 2 weeks.
