I am such a huge fan of peanut butter, and I’m an even bigger fan of easy-to-make recipes. Yes, I love spending time in my kitchen – there’s a reason why I’m a food blogger! But, sometimes, I want to whip something up that I know is super simple and just as equally yummy.

These peanut butter protein balls are my go-to snack whenever I am looking for an instant boost of energy or even when I just want to treat myself and my loved ones with a sweet dessert made healthy.

Ingredients

  • 1 cup cream cheese, softened
  • 1 cup peanut butter
  • 1/2 cuo almond flour
  • 1/4 cup coconut flour (or more almond flour)
  • 1/4 cup protein or collagen powder
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Toppings Optional

  • Chopped nuts
  • Coconut shreds
  • Drizzle white melted chocolate
  • Dusting of cocoa powder
  • Sprinkles

Instructions

  • In a medium mixing bowl, beat the softened cream cheese and peanut butter until smooth and creamy.
    Add the almond flour, coconut flour, protein powder, honey and vanilla and mix until fully combined and a thick dough forms. If needed add a little water or milk a tablespoon at a time, if the mixture seems to thick.
    Roll the mixture into 16 x 1-inch balls and place on a lined baking sheet. Chill in the refrigerator for 30 minutes before serving.
