Nutter Butter Protein Cookies
Ingredients
Cookie Base
- 1 cup oat flour (oats blended to a flour)
- 1/2 cup almond or coconut flour (or more oat flour)
- 1/2 cup almond or cashew (or any other nut or seed) butter
- 1/4 cup honey or maple syrup
- 1/4 cup any milk + 2-3 tablespoons extra if needed
- 1 teaspoon vanilla extract
Cream Filling
- 1/2 cup almond or cashew (or any other nut or seed) butter
- 1/2 cup cream cheese
- 2 scoop protein or collagen peptides powder, vanilla or plain
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Instructions
- Mix the base ingredients together until a thick dough forms. If the mixture seems a little dry add more milk, a tablespoon at a time or if its too wet add more oat or almond flour until the dough comes together.Form the dough into 10-12 balls more or less depending on the preferred size and then slightly flatten into a cookie shape. Mold two flattened cookies into one cookie by pressing together the overlapping edges.Place in the freezer for 30 minutes.Mix the filling ingredients together and let it set in the fridge for an hour or so.then, add the filling to the cookies and place another one on top. store in the freezer in an airtight container and thaw a bit before eating.
