Ingredients
Cookie Base
1cupoat flour (oats blended to a flour)
1/2cupalmond or coconut flour (or more oat flour)
1/2cupalmond or cashew (or any other nut or seed) butter
1/4cuphoney or maple syrup
1/4cupany milk + 2-3 tablespoons extra if needed
1teaspoonvanilla extract
Cream Filling
1/2cupalmond or cashew (or any other nut or seed) butter
1/2cupcream cheese
2scoopprotein or collagen peptides powder, vanilla or plain
2tablespoonshoney or maple syrup
1teaspoonvanilla extract
Instructions
Mix the base ingredients together until a thick dough forms. If the mixture seems a little dry add more milk, a tablespoon at a time or if its too wet add more oat or almond flour until the dough comes together.Form the dough into 10-12 balls more or less depending on the preferred size and then slightly flatten into a cookie shape. Mold two flattened cookies into one cookie by pressing together the overlapping edges.Place in the freezer for 30 minutes.Mix the filling ingredients together and let it set in the fridge for an hour or so.then, add the filling to the cookies and place another one on top. store in the freezer in an airtight container and thaw a bit before eating.
