I love making gummy snacks. They are a great way to add extra grass fed gelatin to my food routine and they are fun, to boot! I wanted to make a batch that weren’t full of sugar – so I came up with these Green Tea, Lemon & Ginger Chews.
They are the perfect treat. Packed with minerals and protein they are a great post-workout snack (or any snack for that matter) and a great treat for children too!
Oh, jello … the sugar (or chemical) laden mystery food of hospitals and cafeterias. As a child I got my fair share of this stuff back then.
Now we are more aware the “Jell-o” gelatin in stores is packed with sugar (or artificial sweeteners), dyes, additives, and gelatin from factory-farmed animals. Not really what you want to put into your body or those of your family.
Skip the box! When you can make homemade gelatin squares (aka “finger jello”) with a few ingredients and 5 minutes, healthy snacks are a cinch.
Healthy gelatin from grass-fed animals can be an incredible protein source and something you can feel good about eating.

Green Tea, Lemon & Ginger Chews
Ingredients
- 3/4 cup cold water
- 5 tablespoons unflavored gelatin powder
- 1/2 cup strongly brewed green tea (use 4 tea bags)
- 2-3 lemons, juice and zest - depending on how lemony you prefer
- 2 tablespoons honey, to taste
- 1 teaspoon fresh ginger, grated
- Optional - 1 cup powdered sugar or substitute, for coating – allulose, coconut sugar, monk fruit, erythriol or stevia.
Instructions
- Pour 3/4 cup of cold water into a medium saucepan.Sprinkle the gelatin powder evenly across the surface of the water. Let it sit undisturbed for 5–10 minutes, allowing it to bloom and absorb the water.While the gelatin blooms, steep 4 green tea bags in ½ cup of hot water according to the tea’s steeping instructions (about 3–5 minutes).Remove the tea bags and set the brewed tea aside. Add the brewed green tea, ginger, and lemon juice to the saucepan with the bloomed gelatin.Place the saucepan over low heat and stir gently until the gelatin dissolves completely and the mixture is smooth. Do not let it boil, as this can weaken the gelatin’s setting power.Stir in honey while the mixture is still warm. Adjust to your taste preference.Carefully pour the mixture into silicone molds or a baking dish lined with parchment paper. Use a spatula to smooth the surface if using a baking dish.Transfer the molds or dish to the refrigerator. Let the chews set for at least 2 hours, or until firm to the touch.Gently pop the chews out of the molds.If using a baking dish, slice the mixture into 25 or more bite-sized pieces with a sharp knife.Coat in the powdered sugar/substitute if desired.Store in an airtight container in the fridge for up to a week.
