3/4cupcold water
5tablespoonsunflavored gelatin powder
1/2cupstrongly brewed green tea (use 4 tea bags)
2-3lemons, juice and zest - depending on how lemony you prefer
2tablespoonshoney, to taste
1teaspoonfresh ginger, grated
Optional - 1 cup powdered sugar or substitute, for coating – allulose, coconut sugar, monk fruit, erythriol or stevia.
Instructions
Pour 3/4 cup of cold water into a medium saucepan.Sprinkle the gelatin powder evenly across the surface of the water. Let it sit undisturbed for 5–10 minutes, allowing it to bloom and absorb the water.While the gelatin blooms, steep 4 green tea bags in ½ cup of hot water according to the tea’s steeping instructions (about 3–5 minutes).Remove the tea bags and set the brewed tea aside. Add the brewed green tea, ginger, and lemon juice to the saucepan with the bloomed gelatin.Place the saucepan over low heat and stir gently until the gelatin dissolves completely and the mixture is smooth. Do not let it boil, as this can weaken the gelatin’s setting power.Stir in honey while the mixture is still warm. Adjust to your taste preference.Carefully pour the mixture into silicone molds or a baking dish lined with parchment paper. Use a spatula to smooth the surface if using a baking dish.Transfer the molds or dish to the refrigerator. Let the chews set for at least 2 hours, or until firm to the touch.Gently pop the chews out of the molds.If using a baking dish, slice the mixture into 25 or more bite-sized pieces with a sharp knife.Coat in the powdered sugar/substitute if desired.Store in an airtight container in the fridge for up to a week.
