I love to DIY these bars for a nutritious and delicious snack or dessert right from my freezer. It’s a great way to satisfy a sweet tooth while fueling your body with better-for-you ingredients.

They have lots of yummy cashew butter flavor and a creamy, crunchy consistency like some of my favorite candies but are high in protein and low in added sugar for a healthy dessert I feel good about eating.

I try to always have a batch on hand to enjoy as an afternoon pick-me-up or after-dinner treat. The beauty of this recipe is that you can add as much (or as little) sweetener as you like, add some dried fruit, use different cereals or nut butters to change things up.

You can also use any flavour yogurt that you like to add sweetness and flavour to make it in your way and taste. You can also meal prep them for the week and enjoy frozen or just keep them in the fridge.

Ingredients

  • 1 cup Greek yogurt 
  • 1 cup rolled oats
  • 1/2 cup desiccated coconut
  • 1/2 cup cashew butter 
  • 1/4 cup cashews, chopped
  • 2 tablespoons honey or maple syrup 
  • 1 teaspoon vanilla extract

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a medium bowl,mix the Greek yogurt, cashew butter, honey, and vanilla extract until smooth. 
    Stir in the rolled oats and chopped cashews until fully combined. Taste test and add more honey or vanilla extract if you think is needed. 
    Press the mixture into the bottom of your lined pan or dish evenly.
    Refrigerate for at least 2 hours to firm up, then cut into 10 bars or more smaller squares and enjoy! 
    I like to keep these bars in the freezer until ready to eat. They should keep for several months.Allow to come to room temperature before eating, then top with additional cashew or almond butter, chocolate chips or melted chocolate if desired.
