Ingredients
1cupGreek yogurt
1cuprolled oats
1/2cupdesiccated coconut
1/2cupcashew butter
1/4cupcashews, chopped
2tablespoonshoney or maple syrup
1teaspoonvanilla extract
Instructions
Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a medium bowl,mix the Greek yogurt, cashew butter, honey, and vanilla extract until smooth. Stir in the rolled oats and chopped cashews until fully combined. Taste test and add more honey or vanilla extract if you think is needed. Press the mixture into the bottom of your lined pan or dish evenly. Refrigerate for at least 2 hours to firm up, then cut into 10 bars or more smaller squares and enjoy! I like to keep these bars in the freezer until ready to eat. They should keep for several months.Allow to come to room temperature before eating, then top with additional cashew or almond butter, chocolate chips or melted chocolate if desired.
