Ingredients

  • 1 13.5 oz can full-fat coconut cream, chilled
  • 1-2 scoops vanilla or coconut protein powder
  • 2-3 tablespoons honey or maple syrup (to taste)
  • 1 teaspoon vanilla extract

Optional Mix-Ins

  • Dark chocolate chips
  • Shredded coconut
  • Crushed nuts

Instructions

  • Chill the can of coconut cream in the fridge overnight. Scoop out the thick cream and discard the liquid or save it for smoothies.
    Add the coconut cream, protein powder, honey and vanilla to a blender or food processor.
    Blend untilcompletely smooth and creamy, scraping down the sides as needed.
    Taste and adjust sweetness or protein to suit your preference.
    Stir through any mix-ins if using.
    Transfer the mixture to a freezer-safe container and smooth the top.
    Freeze for 3–4 hours, stirring once or twice during freezing for a creamier texture.
    Remove from freezer 5–10 minutes before serving to soften slightly, then scoop and enjoy.
