Whoever is responsible for the idea that we should mash a bunch of healthy ingredients into one little ball as a snack is an absolute genius in my book.

After all, who doesn’t love a good protein/energy ball or bar? They are among the most tasty,filling, and convenient healthy snack ideas you can enjoy. If you are looking to make homemade energy balls, though, then you have probably got an inkling that DIY’ing it has certain advantages.
The main draw with going the homemade route is the infinite customizability. When you make your own healthy treats, you never have to compromise on getting exactly what you are looking for. You can also save money by making your own healthy homemade snacks and they can taste way better than anything you can buy at the store.
These are the perfect healthy snack to fuel your day. I loveee lemon and lemon-flavored everything. And these taste really lemon-y, but in a chewy, healthy energy bite! Even better?
No baking necessary here. All the work is done in your blender or food processor. Throw everything in then blend it up until it comes together in a sticky ball. We then roll that sticky dough into balls and coat them in coconut.
I love having my freezer stocked with energy balls like these ones for pre-workout snacks or whenever I just want a ‘lil somethin’.

Ingredients

  • 1 cup cashews, soaked 3+ hours and drained
  • 1 1/2 cups desiccated coconut, plus more for rolling in
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/4 cup hemp seeds - or chia or poppy seeds
  • 1-2 lemons, juice and zest – depending on how lemon-y you prefer

Instructions

  • Place cashews, coconut and coconut oil in a food processor and process until broken down and crumbly and starting to stick together in a dough like mixture.
    Add in seeds of choice, honey, lemon juice and zest and pulse a few times to combine. Taste test and add more honey or lemon if you think it needs it.
    Scoop out tablespoons of dough, roll into balls between your hands, then roll into the desiccated coconut to coat. Place on a plate covered with parchment paper and store in fridge in an airtight container for up to 1 week.
    Store in the freezer for up to 3 months and thaw at room temperature.
