Say hello to the white chocolate version of my absolute favorite easy, no-bake candy: mini Snickers! With 4-5g of protein per bite and absolutely no less flavor than the original candy, these are officially my favorite treat to keep in my freezer.

Why the freezer, you ask? Because I’m impulsive around treats, and I have no self-control, that’s why. Thawing acts as a crucial barrier to entry – a lesson I’ve learned through the literal pain of chipping a tooth trying to bite into one of these tasty morsels while still frozen. You may have been there too!  😊

These little beauties have a satisfying protein bar-esque nougat layer on the bottom, a perfectly balanced salted caramel and peanut layer made with just a few simple pantry ingredients. All of this deliciousness is enclosed in a crunchy, crackly, and cold white chocolatey magic shell layer. It is, quite frankly, a dream.

If you are not a peanut fan, don’t worry! Feel free to swap them out for any nuts or seeds you like. I’ve actually been eyeing the pecan Snickers that keep appearing at the store, and I think the combination of pecans with white chocolate would be especially divine.

White Chocolate Protein Snickers Bites

Let me introduce you to these snickers protein bites or the best little frozen treats you will ever taste. If there’s anything that can make a dessert more adorable, it’s miniaturization, and making mini versions of a rich, creamy, decadent candy bar is no exception.

Ingredients

Base Nougat Layer

  • 1/2 cup oat flour (oats blended to a flour)
  • 1/4 cup peanut (or any other nut or seed) butter
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons honey or maple syrup

Caramel Layer

  • 1/4 cup peanut (or any other nut or seed) butter
  • 1 tablespoon coconut oil, melted
  • 2 teaspoon honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup peanuts, roasted, chopped

Chocolate Coating

  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil
  • Flaky salt

Instructions

  • In a bowl stir together oat flour, peanut butter, protein powder and honey. It should come together but if too dry, add 1/2 teaspoon water at a time until it does.
    Shape into a flat rectangle with your hands, ¼-½ inches thick on a piece of parchment paper. This is your nougat layer.

Caramel Layer

  • Stir together caramel ingredients and peanuts and spread the mix over the nougat layer. Freeze until solid (1 hour at least) then slice into 8-10 small squares.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Use two forks to hold each snickers bite and one by one, dip into the melted chocolate, and roll around until fully coated, then place back on the parchment lined tray.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. 
    Sprinkle with flaky salt if desired, then chill until chocolate has set.
    Store in the fridge for up to 1 week or freezer for up to 3 months. Thaw for a few minutes before eating.
