White Chocolate Fruit and Nut Clusters
White chocolate fruit and nut clusters is an easy no-bake, delicious treat that combines crunchy nuts and fruit with the sweetness of creamy white chocolate into one addicting piece of candy finished with adorable sprinkles!They are part candy clusters, part cookie, and completely delicious! While many chocolate bars are full of fat, sugar, and processed ingredients,it’s easy to make homemade chocolate treats like this recipe and still feel good about what you are eating. You could use dark or semi-sweet chocolate which contains a fraction of calories than regular milk chocolate, and mixing in your favorite dried fruits, nuts and even seeds provides an added health bonus. Try different ones to switch up the flavors and find what you like best!This is also a great recipe to make and bring as a hostess gift. Just wrap up some clusters in parchment paper and place in a nice box. Ingredients
- 1 cup cashews, or peanuts or a mix, raw or roasted,
- 1/2 cup dried fruit, cranberries ,pineapple, apricots etc
- 1/2 cup cashew, almond (or any nut) butter
- 1 cup white chocolate chips
Topping
- Sprinkles – These can be whatever you want them to be. Base it on what’s in your cupboard or what occasion you are celebrating. It’s up to you!
Instructions
- Line a baking sheet or tray with parchment paper or use a silicon baking tray.Place chocolate chips and cashew butter in a medium-sized bowl and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method- (pot of boiling water with a bowl resting on top) melt the chocolate chips and cashew butter together.Once melted add chopped nuts and fruit to the bowl and mix all together until well combined and thoroughly coated in the cashew butter chocolate sauce.Scoop out about 1tablespoon-size cluster at a time onto the baking sheet. Top with your choice of sprinkles or any other topping like chopped nuts or fruit.Makes around 8-10 clusters,depending on your preferred size and allow to set in fridge. Once cool, store in an airtight container.Store leftovers in the refrigerator for up to about 7 days. So you can enjoy a cluster every single day during the week! Then if you want to keep them for longer, you can store them in an airtight container in the freezer for about 3 months. And when you want to eat one, you can either eat it frozen or let it thaw for a little bit in the fridge to soften up.
